Here is a super easy, healthy and tasty snack you can whip up in a few minutes using Food Should Taste Good Olive Tortilla Chips. Instead of black beans, I use bambara beans or earth nut (Vigna subterranea) , used in a lot of Ghanaian dishes.
Ingredients:
7 ounces ground turkey
10 Food Should Taste Good tortilla chips
1/2 cup shredded Mexican blend cheese or shredded Cheddar Jack cheese
1 small tomato, chopped (optional)
4 ounces bambara beans (cooked)
1/2 cup shredded lettuce
Directions:
Heat the oven to 350°F.
Cook the ground turkey in a 12-inch skillet over medium-high heat until it’s well browned, stirring often to separate meat. Pour off any fat.
Reduce the heat to low and cook for 5 minutes or until the beef is cooked through.
Divide the tortilla chips evenly between 2 (12-inch) aluminum pizza pans. Evenly divide the turkey mixture and cheese over the chips. Bake for 5 minutes or until the cheese is melted. Top with cooked beans, chopped tomato, sliced pitted ripe olives and sliced green onion, if desired.
